4C’s Granola

Coconut, Cashews, Cardamom, and Cranberries… oh my!

This granola is an fun variation of my standard granola mix.

-First, melt 1/2 cup coconut oil in a small pan with 1/2 cup honey.

-Grab a large bowl and mix together the following the following:

3-4 cups oatmeal

1 cup dried coconut

1 cup flax seed

1 cup shredded poppy seeds (optional)

1 cup cashews

1 tsp ground cardamom

-Then mix it with the hot liquid ingredients

-Baking can be a bit tricky, you have to play with it until it’s the way you like it.

We have a convection oven, and I bake this granola on one large baking sheet for approx. 30 minutes at 200 Celsius.  I take it out and mix it at least once during the 30 minutes.  Then after it’s baked, I take it out of the oven, sprinkle a cup of cranberries on top, then squeeze a little honey on top, then put it back into the (off, but still hot) oven for another hour.  That way the cranberries don’t dry out, and the honey makes it all stick together a little better.
